My girlfriend knows I just love sweet potatoes. So she sent me this recipe from a French vegetarian website. Since that day I was waiting the moment to do it. So after a walk in the park this morning I thought why not to have it as a snack this afternoon. It was so good. I ate it with a little spoon for the fun. I recommend as a side. Bon appetite!
Roasted sweet potatoes "à la persillade"

Ingredients
- 1 big sweet potato
- 2 tbsp olive oil
- On handful chopped parsley
- 1 garlic clove
- Juice from half citron
- 1/2 tbsp cumin
- Salt
Instructions
- 1. Preheat the oven at 180°C.
- 2. Wash the sweet potato and half lengthwise. With a small knife draw some squares, like on a mango but not so deep (only at the surface).
- 3. Crush the garlic and mix it with the parsley, olive oil and the cumin. Spread out the mixture on the sweet potato half's.
- 4. Add one pinch of salt on each half and put in the oven for around 35 minutes.
- 5. Serve with a drizzle of citron juice and eat with a little spoon (it's funnier).
