Roasted sweet potatoes “à la persillade”

My girlfriend knows I just love sweet potatoes. So she sent me this recipe from a French vegetarian website. Since that day I was waiting the moment to do it. So after a walk in the park this morning I thought why not to have it as a snack this afternoon. It was so good. I ate it with a little spoon for the fun. I recommend as a side. Bon appetite!

Roasted sweet potatoes "à la persillade"

Ingredients
  1. 1 big sweet potato
  2. 2 tbsp olive oil
  3. On handful chopped parsley
  4. 1 garlic clove
  5. Juice from half citron
  6. 1/2 tbsp cumin
  7. Salt
Instructions
  1. 1. Preheat the oven at 180°C.
  2. 2. Wash the sweet potato and half lengthwise. With a small knife draw some squares, like on a mango but not so deep (only at the surface).
  3. 3. Crush the garlic and mix it with the parsley, olive oil and the cumin. Spread out the mixture on the sweet potato half's.
  4. 4. Add one pinch of salt on each half and put in the oven for around 35 minutes.
  5. 5. Serve with a drizzle of citron juice and eat with a little spoon (it's funnier).
