Baked Feta with Onions and Tomatoes

Spring is coming and I feel a need to eat lot of tomatoes and spring onions. Even if in Stockholm is still snowing at this time of the year I couldn’t resist the temptation. So I found this Italian blog that proposed “Feta al forno con cipolle” and did some more researches on the web to finaly make a mixture of the Italian recipe with this Jamie Oliver recipe (I picked the photo from the JO website). Enjoy!

Baked Feta with Onions and Tomatoes

Ingredients
  1. 200 g feta cheese
  2. 250 g mixed tomatoes
  3. 1 bunch of spring onions, sliced
  4. 1 handful of black olives
  5. ½ bunch of fresh basil
  6. olive oil
  7. salt and pepper
Instructions
  1. Preheat the oven to 180ºC.
  2. Crumble the feta into large chunks, roughly chop some of the tomatoes, leaving the smaller ones whole, then destone the olives (if not already destoned).
  3. Pick the basil leaves.
  4. Combine the feta cheese, tomatoes, olives, onions and a splash of oil in a baking tray.
  5. Season, then pop it into the oven for 25 - 30 minutes, or until the tomatoes are tender and the feta is golden at the edges.
  6. Scatter over the basil and serve.
