Spring is coming and I feel a need to eat lot of tomatoes and spring onions. Even if in Stockholm is still snowing at this time of the year I couldn’t resist the temptation. So I found this Italian blog that proposed “Feta al forno con cipolle” and did some more researches on the web to finaly make a mixture of the Italian recipe with this Jamie Oliver recipe (I picked the photo from the JO website). Enjoy!
Baked Feta with Onions and Tomatoes

Ingredients
- 200 g feta cheese
- 250 g mixed tomatoes
- 1 bunch of spring onions, sliced
- 1 handful of black olives
- ½ bunch of fresh basil
- olive oil
- salt and pepper
Instructions
- Preheat the oven to 180ºC.
- Crumble the feta into large chunks, roughly chop some of the tomatoes, leaving the smaller ones whole, then destone the olives (if not already destoned).
- Pick the basil leaves.
- Combine the feta cheese, tomatoes, olives, onions and a splash of oil in a baking tray.
- Season, then pop it into the oven for 25 - 30 minutes, or until the tomatoes are tender and the feta is golden at the edges.
- Scatter over the basil and serve.
